Love the digi, thank you. The trick to pheasant is that you need to treat it like a turkey, stuff if and put it in the oven, they are awesome. My father used to hunt them and I can remember my mother hanging them up across the lawn to pluck them. We had them instead of chicken and turkey, I never had chicken until I was 7 and I still don't like them, lol. My grandmother got all the chickens when they were too old to lay eggs anymore. You really need to try one some day. You can get them at your butcher, your local grocery store will take orders for Thanksgiving. Just do not boil them! That's when they get rubbery.
Beautiful image! Pheasant is actually something I have eaten... a friend of mine who hunts got some and cooked it up for me. It was delicious in a bechamel sauce.
